Recipe inspiration

Try simply poaching in white wine and serving with steamed greens and a poached egg, or roast a whole fillet wrapped in pancetta for a salty edge to the sweet flesh. Cod is also brilliant cut into cubes and gently cooked in a rich curry sauce.
